Warm
Citrus Dressing
1 tbs marmalade
1 tbs Dijon mustard
2 tbs red wine vinegar
1 tbs finely grated orange rind
2 oranges
2 tbs extra virgin olive oil
Salt
Freshly cracked pepper
Combine reserved mustard, marmalade, vinegar and orange rind in a
saucepan and heat through. Remove from heat. Add olive
oil, season with salt and pepper to taste. Remove rind and
pith from oranges and segment into pieces.
This dressing is lovely drizzled over roasted, barbequed or
pan-fried Pork.
Coriander Marinade
2 tbs finely chopped coriander root and stem
1 tbs freshly grated ginger
1 tbs chilli paste
1 ½ tbs fish sauce
1 tbs fresh lime juice
½ tbs brown sugar
Combine coriander root and stem, ginger and chilli and rub into
Pork. Stir to combine fish sauce, lime juice and brown sugar.
Add to Pork and marinate for 10 minutes.
This marinade is perfect for stir-fry.
Sweet Soy Dressing
2 tbs soy sauce (salt reduced)
1 tbs fresh lemon juice
3 tbs brown sugar
1 tbs finely chopped Vietnamese mint, optional
Combine soy, lemon juice, sugar and mint in a covered container
and shake well.
This dressing is perfect for salads or cooked Asian
greens.
Cumin and Coriander Rub
1 tbs ground cumin
1 tbs ground coriander
1 tbs sweet ground paprika
1 ½ tbs finely cracked black pepper
¼ tbs sea salt
Place Pork steaks onto a plate. Combine cumin, coriander,
paprika, pepper and salt in a bowl and stir well. Sprinkle
and gently rub spices into Pork, coating both sides.
BBQ or pan-fry Pork as usual.
Maple Syrup Marinade
1/3 cup maple syrup
1 ½ tbs Dijon mustard
1 tbs vegetable oil
Freshly cracked pepper
Combine maple syrup, mustard, oil and pepper in a large flat
container. Add Pork and coat each side with marinade.
Cover and allow to marinate in fridge for a minimum of 1 hour,
turning once. BBQ or pan-fry Pork as
usual.
Chinese Five Spice
Marinade
2 tbs soy sauce
½ tbs Chinese five spice
2 tbs peanut oil
Combine Pork with soy sauce, spices and oil. Marinate for
20 - 30 minutes. This makes a great marinade for
stir-fries.
Mustard and Herb Rub
2 tbs Dijon mustard
1 tbs finely chopped flat leaf parsley
2 tbs finely chopped mint
2 tbs finely chopped chives
Freshly cracked black pepper
Combine mustard, herbs and pepper and spread evenly over both
sides of the Pork. Pan-fry or BBQ Pork as
usual. Avoid high heat which may burn coating.
Orange and Chilli
Marinade
2 tbs finely grated orange rind
¼ cup fresh orange juice
1 tbs red chilli paste
1 tbs finely grated ginger
Combine ingredients in a non-metallic bowl and add Pork.
Cover and chill for 30 minutes, turning once. BBQ or
pan-fry Pork as usual.
Pepper Rub
2 tbs sweet paprika
1 tbs cracked black pepper
1 tbs finely grated fresh ginger
½ tbs ground sage
Salt
Combine paprika, pepper, ginger, salt and sage. Lightly
rub this seasoning over both sides of the Pork. BBQ
or pan-fry Pork as usual.
Honey Dressing
¼ cup olive oil
1 tbs red wine vinegar
3 tbs honey
Salt and pepper, cracked
Combine ingredients in a covered container and shake well.
Season to taste. This dressing is perfect for warm
salads or Asian greens.
Plum and Soy Marinade
1 cup plum sauce
½ cup soy sauce
Combine the plum sauce and soy sauce in a small bowl and mix
well. Brush the sauce on both sides of the Pork and place on
preheated pan, grill or BBQ.
Lemon Mustard Marinade
Juice and rind of 1 lemon
1 tbs olive oil
1 tbs Dijon mustard
1 tbs parsley, chopped
1 cup apple sauce for serving
Combine the lemon juice and rind, olive oil, mustard and parsley
in a glass bowl and mix well. Coat the steaks well in the
mixture and allow marinating for 20 minutes or up to 4 hours,
turning frequently. Cook Pork on a preheated pan,
grill or BBQ.
