Diced

When it comes to stir-frying strips, diced pork or mince the best method is cooking at a high heat for 2-3 minutes until light brown.

Tips:

  • Have all your ingredients chopped prior to commencing cooking
  • Ensure all ingredients are roughly equal in size to ensure cooking is even
  • Add the ingredients that take longer to cook first such as onions, celery and carrots
  • When cutting meat for stir fry, always cut meat across the grain
  • Always have your wok nice and hot, you should be able to see a heat haze when it is ready to go.  Try not to burn the oil as this may affect the taste of the meat
  • Cook in small batches (200g) to keep the heat in your wok.

BASIC RECIPE: Pork Stir Fry

STEP 1

Pour the oil into a large heavy-based wok set over a high heat and fry the pork for 2-3 minutes, until lightly-browned.

STEP 2

Add 3 cups mixed chopped vegetables and continue cooking for a further 5 minutes.

STEP 3

Pour in sauces of choice, then cook for 2 minutes, until glazed.

Cut out the slicing time and use pre diced pork in a casserole.

Instructions based off 800g diced pork (whole roast, steaks or pre diced)

Use additional ingredients of your choice:

  • 1 onion or leek
  • 1 Tbsp minced garlic (optional)
  • 2 cups veg
  • 500ml cooking liquid / stock

STEP 1

Preheat oven to 160°C. Season pork with salt and pepper, then toss with oil. Fry in a large heavy-based pan over a high heat for 5 minutes, until browned. Set aside.

STEP 2

Add the leek and garlic to the pan and cook for 5 minutes, until the leek is softened. Put the pork and leek mixture in a lidded casserole dish, then pour in the stock. Fit the lid, then bake for 1 hour.

   

STEP 3

Add the pumpkin and walnuts, mix in, then bake for one more hour.

PORK CASSEROLE WITH LEEK, PUMPKIN AND WALNUTS

  • 800g diced pork
  • sea salt flakes and freshly-ground black pepper
  • 1 Tbsp oil
  • 1 leek, diced
  • 1 Tbsp minced garlic
  • 500ml beef stock
  • 2 cups pumpkin, diced
  • ½ cup walnuts, chopped
