BBQ Pork and Broccolini Stir Fry

Ingredients

  • 500g thin pork loin steaks, cut into 2cm-thick slices (see Tips)
  • ¼ cup canola, peanut or vegetable oil
  • 1 brown onion, finely chopped
  • 2 teaspoons crushed garlic
  • 1 red capsicum, cut into 1cm-thick x 5cm long strips
  • 1 bunch broccolini, cut into 4cm pieces
  • Steamed rice and sliced green onions (shallots) -optional, to serve

Stir-fry sauce

  • ½ cup good-quality barbecue sauce (see Tips)
  • 1/3 cup hoisin sauce
  • 2 tablespoons honey

Method

  1. 1.
    To make stir-fry sauce, combine all ingredients in a bowl. Mix until smooth. Set aside.
  2. 2.
    Heat a wok or large frying pan over high heat. Add 1 tablespoon oil and swirl around the wok or pan. Add half the pork and stir-fry for 2-3 minutes until golden and almost cooked through. Transfer to a bowl. Repeat using remaining pork and 1 tablespoon oil.

    Heat remaining 1 tablespoon oil in the wok or pan. Add onion and garlic. Stir fry for 2 minutes or until softening.

    Add capsicum and broccolini. Stir fry for 2-3 minutes until vibrant.

    Add stir-fry sauce. Stir-fry until the sauce is hot and bubbling. Toss through pork (and juices) until well combined and hot. Serve with rice and green onions (shallots), if using.

General Information

Tips:

You can use regular (not thin) pork loin steaks for this recipe. These are thicker, so cut into 1.5cm-thick slices and cook for a minute or two extra until golden and almost cooked through.

A range of good-quality barbecue sauces is available in supermarkets. We use Stubbs brand original barbecue sauce.
