
Double Decker Pork Tacos

Serves 4 people
You’ve heard of tacos, but have you heard of double deck tacos, double the flavours and double the fun!
Ingredients
- •1 tablespoon oil
- •1 medium brown onion, finely chopped
- •500g pork mince
- •1 x packet soft and hard taco kit (see general information tab)
- •2 x 125g cans corn kernels, drained
- •10 mini tortillas, heated
To serve
- •Baby cos lettuce leaves
- •Chopped grape or cherry tomatoes
- •Sour cream
- •Lime wedges
- •Shredded Cheese
Method
- 1.Heat oil in a large frying pan over medium-high heat. Add onion. Cook, stirring occasionally, for 3 minutes until softening.
- 2.Add pork. Cook, breaking up the mince, for 4-5 minutes until pork is lightly browned.
- 3.Add taco seasoning and ½ cup water. Stir to combine. Reduce heat to medium.
- 4.Cook, stirring, for 3 minutes until thickened and bubbling.
- 5.Stir in corn and ¼ cup taco sauce. Cook for 2 minutes.
- 6.Meanwhile, heat tacos and mini tortillas following packet directions
- 7.To serve, place warmed tacos onto a board. Fill with one or two lettuce leaves and pork mixture.
- 8.Sprinkle with tomatoes. Top with a dollop of sour cream. Drizzle with remaining taco sauce.
- 9.Wrap each taco with a warmed mini tortilla. Serve with lime wedges.
- 10.Optional: add sour cream and cheese between the soft and hard shells.
