Ingredients

•250g pork stir fry slices

•5 garlic cloves, finely minced

•½ brown onion, thinly sliced

•250g fresh Hu Tieu noodles (or any flat rice noodles)

•½ cup bean sprouts
-
•1 cup garlic chives, cut into 5 cm pieces

•1 handful chrysanthemum leaves (tung ho)
Sauce
-
•3 Teaspoons sugar
-
•3 Teaspoons soy sauce
-
•3 Teaspoons dark soy sauce
-
•6 Teaspoons (1½ Tablespoons) oyster sauce
-
•3 Teaspoons sriracha (optional)
-
•3 Tablespoons water
-
•3 Teaspoons fried garlic
-
•3 Teaspoons fried shallots
To Garnish

•Extra fried garlic and fried shallots
-
•Sliced spring onion
-
•Fresh coriander (optional)
-
•Sliced red chilli (optional)

•Fresh lime (optional)
Method

1.Mix all the sauce ingredients in a small bowl or jar.

2.Blanch the Hu Tieu noodles quickly in boiling water, rinse under cold water, drizzle with oil, and toss to coat.

3.In a hot pan, fry garlic and onion until fragrant.

4.Add pork and stir fry until just cooked. Add bean sprouts and cook until fragrant.

5.Pour in the sauce and simmer for a couple of minutes until sticky.

6.Turn off the heat, add noodles, and toss until glossy and evenly coated.

7.Add garlic chives and tung ho, toss through, and serve.

8.Garnish with fried garlic, shallots, and your choice of toppings and enjoy!
