
Mustard Glazed Pork Chops with Bean salad

Serves 4 people
Ingredients
- •4 pork loin chops (250g each)
- •Oil for brushing
Glaze
- •2 tablespoons seeded mustard
- •½ cup brown sugar
- •½ cup maple syrup or honey
- •1 tablespoon balsamic vinegar
Salad
- •440g can white beans, drained & rinsed
- •1 red capsicum, finely diced
- •½ cup baby basil leaves
- •4 tablespoons vinaigrette dressing
To Serve
- •200g snap peas, steamed
Method
- 1.Heat frying Pan or griddle pan over a medium heat for 3-4 minutes.
- 2.Cook pork chops on both sides for 4-5 minutes depending upon the thickness. Once cooked allow to rest in the pan off the heat.
- 3.Whilst pork chops are cooking combine the mustard glaze ingredients in a small saucepan and stir over a low heat.
- 4.Just prior to serving, spoon the glaze over the pork chops to glaze.
- 5.Serve glazed pork chops with the bean salad and steamed snap peas.
