Pork Fillet Stir Fry

Ingredients

  • 300g pork fillet, sliced

Marinade

  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon crispy chilli paste
  • 3 tablespoons extra virgin olive oil
  • 1 inch knob ginger
  • 2 cloves garlic
  • 1 long red chilli
  • 200g shiitake mushrooms
  • 200g snow peas
  • 4 spring onion
  • 1 bunch garlic chives
  • 1 bunch coriander

To serve

  • Deep fried shallots
  • Toasted sesame

Method

  1. 1.
    Coat the pork in the marinade, set aside for a few minutes
  2. 2.
    Add the ginger, garlic, chilli and pork to a hot pan and toss through. Add in remaining ingredients and cook until softened and pork is cooked through
  3. 3.
    Serve with shallots and toasted sesame seeds
