Pork loin steak with baked haloumi and tomatoes

Serves 4 people



  • 4 lean pork loin steaks
  • 1 tablespoon oil
  • Salt and pepper
  • 8 small round ripe tomatoes, halved
  • 200g haloumi cheese, sliced
  • 1 tablespoon olive oil
  • 2 cloves garlic, sliced
  • Salt and pepper
  • ¼ cup kalamata olives
  • Fresh basil leaves
  • Crusty fresh bread to serve


  1. 1.
    Place the sliced tomatoes and haloumi into a shallow baking dish, drizzle with olive oil, sprinkle with garlic and season with sea salt and freshly ground black pepper.

    Bake in the preheated oven for 20 minutes.

    Brush the pork loin steak with a little oil and season with salt and pepper.

    Preheat the griddle pan for 1-2 minutes over a medium heat.
  5. 5.
    Place the pork steak in the griddle pan and cook for 6 minutes, turn the steak and cook for a further 2 minutes. Remove steak from the pan and rest in a warm place for 2 minutes.

    Arrange the baked tomatoes and haloumi on a warm serving plate with the pork loin steak. Garnish with olives and fresh basil leaves. Serve with fresh crusty bread.
