Slow-Cooked Pork Loin Chops

Serves 4 people

Pork loin chops can be slow-cooked in either a saucepan or slow cooker, but as they are a prime cut, care needs to be taken not to over-cook them as they may dry out.



  • 4 170g pork loin chops
  • 2L brine
  • 1½ cups sliced potatoes
  • 2 cups sautéed vegetables (onions, celery, garlic)
  • 1½L cooking liquid (stock, tomatoes, wine)

    Place the pork loin chops in brine in a lidded glass container in the fridge for 4 hours, or overnight, then drain. Discard the brine.

    Combine the potatoes, pork chops, vegetables and cooking liquid in a lidded saucepan or slow cooker. Simmer very gently for 3½ hours, or cook in slow-cooker on low temperature for 6-8 hours, until the meat is tender.
