Loin Rack

To cook the crispiest crackling, there are three things you need:

NOTE: In order for crackling to appear, the skin must be as dry as possible, then go from cold to hot as fast as possible, causing the skin to blister and crisp. For perfect results first time every time, leave the pork on a rack over a tray uncovered in the fridge overnight before roasting. If this isn’t possible, pat with paper towel, or dry thoroughly with a hair dryer on cold setting.

Instructions based off 8-bone pork rack, skin dried

Use additional ingredients of your choice:

  • 2 tablespoons oil
  • 1 tablespoon sea salt flakes
  • 3-4 teaspoons herb/spice rub (optional)

STEP 1

Preheat oven to 220°C. Use a small sharp knife to score the pork skin in fine parallel diagonal lines.

STEP 2

Combine oil with chopped herbs & spices of choice in a bowl, mix well, then rub onto the pork.

   

STEP 3

Set the pork on a wire rack over a roasting tray and bake for 30 minutes, then reduce heat to 140°C and bake for 1 hour. Rest for 20 minutes, then carve and serve.

ROMAN-STYLE ROAST PORK RACK

Preparation time: 10 minutes
Cooking time: 1½ hours

  • 8-bone pork rack, skin dried
  • 1 tablespoon sea salt flakes
  • 2 teaspoons fennel seeds, cracked
  • 1 teaspoon chilli flakes
  • ½ bunch rosemary leaves, chopped
  • 2 tablespoons extra virgin olive oil
