
Asian-flavoured pork bolognese

Ingredients

•1 tablespoon vegetable or olive oil

•1 brown onion, finely diced

•2 garlic cloves, crushed

•2cm piece ginger, peeled and finely grated

•2 long red chillies, deseeded and finely chopped

•100g shiitake mushrooms, stems removed and finely chopped

•500g pork mince

•1/3 cup hoisin sauce

•1 cup salt reduced chicken stock

•2 tablespoons rice vinegar

•2 teaspoons sesame oil

•4 green onions (shallots), trimmed and finely sliced (plus extra to serve)

•400g spaghetti
Method

1.Heat oil in a frying pan over medium-high heat. Add onion, garlic, ginger, chillies and mushrooms and cook for 5 minutes or until mushrooms begin to soften. Add pork mince and cook, stirring with a wooden spoon and breaking mince up, for 8-10 minutes until mince is browned.

2.Stir in hoisin, stock and rice vinegar and bring mixture to the boil. Reduce heat, cover and simmer, stirring occasionally, for 15-20 minutes or until slightly thickened. Stir in sesame oil and green onions. Season with salt and pepper.

3.Meanwhile, cook spaghetti following packet directions. Drain.

4.Sprinkle pork bolognaise with extra finely sliced green onions and serve with the spaghetti.
